There is in fact quite a bit to read about Georgia and the Caucasus, depending on what topics you are interested in and what languages you can read. This past May I gave a talk purporting to summarize the state of the art in Western Caucasology, and was amazed how much quality stuff has been published recently. As a start, I could suggest looking through the Georgia bibliography at Indiana University's library web site (http://www.libraries.iub.edu/index.php?pageId=1001199). It is far from complete and not entirely representative, with a slant toward work on contemporary social and political issues.
